Shiitake (lentinula edodes) mushrooms are most commonly used in soups and sautéed in food dishes around the world. Aside from their Earthy umami taste, these mushrooms have been cited for their medicinal properties as well.

In one study, after four weeks of shiitake consumption the adults of the case study exhibited the following: increased T cell & NK cell action, demonstrated greater ability to express activation receptors, implied gut inflammation, implied lower inflammation

Turkey tail (trametes versicolor) mushrooms contain both sets of polysaccharides PSP and PSK which both support the immune system.
